A recipe for picky kids...

And for husbands who want "man-food."

A healthier Sloppy Joe

3 pound package of ground chicken or ground turkey
2 large jars of low sodium marinara sauce
low fat (made from skim milk) mozzarella cheese
whole wheat flat bread
olive oil cooking spray

Spray a large saute pan with the olive oil.

Brown the ground turkey (or chicken) until it is fully cooked~no pink left.
Drain the grease and set aside.

Warm the marinara sauce in a large pot on the stove.
(If you would prefer to make your own I love this recipe)

Pour the meat into the sauce and mix thoroughly.
If you like a little extra spice add a few shakes of Tabasco sauce, some red pepper flakes, and oregano.

Once the sauce is spiced to perfection toast your flat bread. We get the small round kinds and just throw those in the toaster oven.

Place cheese slices or shreds on the bread with heaping spoons of sauce.
Heat these for 30 seconds in the microwave or on "light" in the toaster to melt the cheese.

What you have then is a beautiful, messy, gooey and healthy Sloppy Joe!
Perfect for kids, and the "big kid" in your life who needs to eat better but just doesn't know it.

You just picked out what I'm having for dinner tonight. Thanks! :)

Sounds delicious, and hopefully something Mr. Picky Eater (aka P) will eat!

Ashley, Lucy won't actually eat this yet either. She's picky, and this is great for picky kids but I think she's too young. She has no idea what to do with something like that. It will come in time thought.

Krista, it doesn't have a lot of taste at all. I guess it does taste closer to chicken. Ground turkey doesn't taste like anything. The biggest difference I think is in the texture. I really don't like ground beef either. Its kind of gritty or something. Ground turkey and chicken are really filling and you won't bite into any tiny hard pieces of fat.
